Well if your goal is to strengthen your abdominal muscles, then crunches are the way to go. Crunches tend to work the upper rectus abdominus muscles, while sit-ups work primarily the illopsoas muscles (the hip flexors). The abdominals only really perform an isometric contraction during sit-ups while the illiopsoas serves as the prime mover. So if your goal is stronger abs, then throw out the sit-ups and focus on the crunches. Of course you'll also need exercises that work the lower abs as well, like the reverse crunch, and something for the obliques. Oh and forget about the Roman Chair for abdominal strngthening. Most of what I see people doing on the Roman CHair is once again primarily strengthening the hip flexors.

Crunches are better. Sit ups can cause a lot of un-needed lower back stress. Not to mention that you can only do sit-ups one way.. while you can do a variety of different crunch routines to acheive results.
A really good ab workout is on what they call the "roman chair". Most gyms have them. You can do leg lifts or knee lifts. Very challenging.

Hope that helps! ;-)

Sit ups, because crunches can give you back problems over time.
