what I've always done: turn the oven 25 degrees cooler then the recipe says, if it wants 350oF turn it to 325oF.
Also, make flat, even cookies, when scooping out the batter use an ice cream scoop so you have the same size cookies and don't have to worry about (level it off with the back of a butter knife) now when you get them on the pan, what I always do is get some wax paper and set the paper on top of the cookies, them smoosh them down with another cookie pan. you can forgo the paper, but I find it easier to use that then peeling the cookies off of the other pan.
Lastly, don't over bake, always go with the low side of the time limit, if you feel they're too raw, then leave them in a little longer, but keep checking.

Delicious Soft Chocolate Chip Cookies
3/4 cup butter, softened
1 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups flour
2 teaspoons cornstarch
1 teaspoon baking soda
8 ounces chocolate, cut into chunks (approx 1 1/2 cup)
Preheat oven to 350°F.
Cream together; butter & sugars until creamy.
Add egg & vanilla & blend well.
In another bowl combine flour, cornstarch & baking soda.
Add to butter mixture and then add chocolate chunks.
Drop by tablespoons onto a greased baking sheet & bake for 8-10 minutes, until golden brown around the edges.

Mix wet ingredients to dry. Add nuts and chocolate chips. Bake at 350 degrees on lightly greased cookie sheet 10-12 minutes.

Don't overcook them. Remember they don't really look done when they are done. If the recipe says 8-10 minutes take them out at 9 minutes and put them on a cooling rack right away. Good luck!!!

Three things you can to do any recipe:
1) substitute oil for crisco
2) underbake by a little
3) cool on the countertop, NOT wire racks, because if you underbake by the right amount, they will fall through the rack

Tend to the oven and make sure they are not OVERBAKED. Good luck with that. Don't worry. I tried a few times and only after my fifth time did my cookies came out soft. You just have to tend to the oven every minute or so. =)

Take them out of the oven when it looks like they're not even done. Then they will be soft and delicious. If you wait until they look done they will be hard.

Use more fat like shortening or butter, use egg yolks instead of whole eggs, and don't over-mix the ingredients.

well my grandma always trys her best to watch it and when its hot but still not cook she takes it out lowers the temp. and puts it in agian and they end up great try it
