Well I go to Culinary School. If it has cream in it, which I think it does.......until it smells bad!! That's what the chef always tells us.

It should be fine another month or so. Serve it at Cmas, and make this recipe to help use it up.

BAILEY'S IRISH CREAM TRUFFLES

12 oz semi sweet chocolate
1/4 C Bailey’s
1/4 C heavy cream
2 egg yolks
1 Tbsp. butter

Melt chocolate in a heavy pan on very low temp. Whisk in Bailey’s and heavy cream. Whisk in yolks one at a tim; then whisk in butter. Mixture will start to thicken; refrigerate overnight or until firm.

Roll into small balls. Dust with xxx sugar or cocoa or chopped nuts or whatever you want. (I did toasted hazlenuts)

Yield: 16.

(I doubled the recipe and got a cool 3 doz.)

When consumed properly, it shouldn't last long enough to need refrigeration!

First of all - I would be ashamed to have that crap even in my house, let alone my fridge. Who drinks that junk anyway.
