You will have to find a trans-Atlantic cruise line.

The most famous being the Queen Mary. That leaves from England and arrives in New York City.

There are other cruise lines that make the trip, but I don't know if you will be able to find one from Turkey. You may have to travel to another city in Europe and go from there.

If you want to go inexpensively, check with the commercial freight shippin companies in your area. Most freight ships have accomodations for about 10 to 15 passengers.

Now it's definitely not a cruise ship, you'll have to bring books or whatever to entertain yourself, but you will be able to eat with the crew and depending upon the weather you can go out on deck.

Zim, a company I used to work for, has ships that sail from Turkey to New York. Lykes does too but their website was down when I checked it.
