The naturally occuring citric acid makes it sour.
That's the same stuff they use to coat Sour Patch candies.

As to the color yellow, natural selection (evolution) and probably some selective breeding thrown into the mix...
unless you're looking for the specific pigment.

i think its the acid in them about making them yellow i have no idea.

I'm guessing it's the acid thats in it that makes them sour,yellow,I dunno
