consistency! when he jumps up there say NO in a firm voice....repitition is the key! The water bottle can do the trick. I know a lot of people will probably disagree with me, but i have a shock collar (used for training purposes only) that works wonders! They get a short little zap and dont know where it's coming from (definately better than teaching the dog to fly!!). good luck with the counter problem!

I had to sprinkle cayenne pepper on the edge of the counter and push everything to the back. You can buy a special pepper mix from the pet store, but this way is cheaper and more effective.

Try some double sided sticky tape from a carpet store after a few times he will stay away and you dont need it anymore .That sounds like an interesting mix. Can you put a picture in here somehow ? A blog ?

stack a bunch of empty cans (soda or food) something that will make a lot of noise when he jumps up they will topple over and scare him so he won't jump up on the counters anymore. this may take a couple of times for him to figure it out

Tap him on his ear everyone time he jumps up there. And keep the food off the counter.

when he/she does it, spray them in the face with a water bottle...water is harmless, but it will be uncomfortable enough that when you do it so many times, he/she will learn that they are not supposed to so that...hope it works...unless your dog likes it...lol...
