What does the tourmaline do in a flatiron. I am going to buy a FHI Platform 1'', but there is one with tourmaline and another without. Which is best?

I don't know much about the Tourmaline, but I had bought one and the plates had little bumps in it it was not smooth I returned it, and I love the 100% solid ceramic best for my hair.

Tourmaline has pyro-electric and piezo-electric properties. This means that Tourmaline will become electrically charged if subjected to heat or pressure. If you rub Tourmaline, it will become charged and be able to attract dust and small pieces of paper. (Try it!) The Dutch, who first imported this gemstone into Europe, were aware of this special property and used to use a heated Tourmaline to pull ash out of their meerschaum pipes. They called it aschentrekker or ash puller.

The Tourmaline in flat irons attracts tiny particles of water and helps to dry your hair faster. As a bonus, it may also remove dust and impurities. The electrical charge in the Tourmaline helps to reduce frizz and smoothen out the cuticle therefore making your hair look straight and shiny. I think this would be less harsh than a traditional flat iron that uses only heat.
