dont let anybody from the mediterrian hear you talking about freezing olives they would go mad. anyway olives cannot be frozen you keep them in the brine water that they come it. it is best to keep them in a seal glass jar. they last for ever.

no, olives don't freeze well.
but you can store them in a jar and cover with olive oil... then put in the fridge, they'll keep for about a month. Or, make tapenade...
INGREDIENTS:
20 pitted black olives, coarsely chopped
1 Tbsp rinsed, drained, and chopped capers
1 tsp fresh lemon juice
2 tsp olive oil
1/2 tsp anchovy paste (optional)
Fresh cracked black pepper
PREPARATION:
Combine olives, capers, lemon juice, olive oil, anchovy paste, and pepper. Mix well. Refrigerate and use within two weeks.
Use as a spread for sandwiches like panini and muffaletta or as a condiment.
Store in a small jar, with a little layer of oil to avoid molding.

I personally don't think they are ever good to eat, I would think though they would be ruined if they were frozen after taken out of the can.

Once they were unfrozen they would be mushy. Put them in a container in the fridge, they last quite a while.
