Your uncle is just a grown-up bully, who is picking up on you as you are obliged to be nice to him.
Start seeing him as a human being first, and let him know that he is upsetting you, so that he too learns his lesson of not treating children disrespectfully or hurtfully, even though it might outwardly seem playful or prankish. He is probably still doing it as none of his nephews ever objected to it. Do him a favour and yourself too, let him know that you do not like it when he behaves that way.
Having said that, make sure you carry yourself respectfully around him or any one else, which means respectful towards yourself, if you treat yourself lightly around others, they learn to treat you similarly and start taking you as an easy target of their pranks.
Though do continue to enjoy his company, just don’t let him cross the boundaries with you.
