How long does it takes to process such visa?

A visitor visa cannot be changed to a working visa. It must be applied in the country of origin.

Fraginald is right. However if you are already in NZ you can apply to change from the visitor [visa] permit you already have to a work permit- just fill out the application for a work permit form and submit to your nearest branch. (with fee of course).
To get a work permit though you would have to have a job offer, which can be hard to get given that you have no work permit (catch 22)

You can also get a variation of the conditions of your visitor permit to allow you to work x amount of hours a week. (Variation of conditions form- all available on www.immigration.govt.nz).

Depends on what you want to do- if you just want to do casual work or don't know what work you'll be doing voc would be best.

If you have a NZ partner you can apply for an open work permit based on your relationship.

Applications can take from 2 weeks to a month. But usually a few weeks will do the trick.
