I'd like to learn more about these and how we on the other side of the world can celebrate. The seasonal differences confuse me!

As these festivals are based off the seasons you would be celebrating them 6 months differently. So you would be celebrating harvest festival in your Autumn instead of ours. There are literally tons of ways to celebrate the turning of the wheel. You would do well to do a web-search of the "Wheel of the Year" so that you can get several ideas on different festivals and rituals and can bases yours off the parts you like.
