Yes to both. When I make pastry any left over is rolled out and placed on a plate lined with greaseproof paper, when frozen I pop it into a bag, then it can be used for pie tops so it helps to roll out to the shape and size of a dish you will use. I have never frozen pastry in a block but I suppose it can be done.
If you warm Mince pies in a microwave be aware that although the pastry may still feel cool or warmish, the mincemeat inside may be Very Hot.
Happy Christmas

If you mean "uncooked" shortcrust pastry, then yes- but wrap it well so that it doesn't get freezer "burn".
You can also freeze you mince pies, but for best results freeze them "part cooked" and then finish them off in the oven when you're ready to use them. You can even do the finishing off from frozen in a weel preheated oven, this peoduces beatifully moist results too.

yep you definately can freeze shortcrust pastry. After it has frozen you have to let it defrost and all that. And you can freeze mince pies too. It should keep for a 6 months.

Yes. I always buy frozen pastry from the supermaket (I'm too lazy to make my own and yes, I know it's not hard to do). Mince pies freeze lovely. You'll have no problems with them.

Freezing pastry and mincepies in advance of Christmas is the only way to survive the baking rush. It also appears to improve the pastry. After defrosting, remember to warm up pies as they will improve dramatically.

I believe you can if they have not previously been frozen then de-frosted. Mince pies definitely freeze.

if you want to freeze pastry its best to make it into bottom pie shells and put it in the foil pie pans, it can get brittle and hard to work with frozen in a lump. but you can freeze the whole pie, wrap in plastic wrap and foil, freeze raw or baked , raw you get a better product when its baked.
