I use to get this to die for pancake at I restaurant where i use to live, it was a pancake that was cooked in the oven and it had apples. Does anyone have a good recipe to help me out with this craving? I would love to make it for Christmas morning breackfast. Thank you in advance.

INGREDIENTS
2 cups whole wheat flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 eggs, lightly beaten
2 cups fat-free milk
2 tablespoons honey
1 tablespoon canola oil
1 medium apple - peeled, cored and chopped
DIRECTIONS
In a large bowl, combine the flour, baking powder, cinnamon and salt. Combine the eggs, milk, honey and oil; stir into dry ingredients just until moistened. Add apple.
Pour batter by 1/3 cupfuls onto a hot nonstick skillet coated with nonstick cooking spray. Turn when bubbles form on top; cook until second side is golden brown.
Nutritional Analysis: 2 pancakes equals 246 calories, 5 g fat (1 g saturated fat), 73 mg cholesterol, 416 mg sodium, 43 g carbohydrate, 5 g fiber, 11 g protein. Diabetic Exchanges: 2 starch, 1 lean meat, 1/2 fruit.

Ingredients
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon soda
1/4 teaspoon salt
2 eggs, beaten
2 cups buttermilk
1/2 teaspoon cinnamon (optional)
1/2 cup apple sauce, or cooked fruit of your choice
Optional topping: butter, hot syrup

Directions
# Preheat oven on low to keep cakes warm until serving.
# Sift together all dry ingredients.
# Add eggs & buttermilk.
# Whisk until smooth.
# Preheat prepared aebleskiver pan over medium high heat.



Tip: Test temperature and heat by cooking 1 or 2 aebleskivers prior to making a whole batch.

# Fill aebleskiver molds 2/3 full with batter.
# Drop 1 teaspoon of apple sauce or fruit onto center of batter.
# Cook until the edges underneath become slightly browned, approximately 1 to 2 minutes.
# Turn apple aebleskivers over carefully and continue cooking an additional 1 to 2 minutes.
# Remove from pan. The aebleskiver deflate some once removed from the pan.
# Place in preheated oven until ready to serve.

Serve with butter, hot syrup, additional fruit or dust with powdered sugar.
