Because when the bread bakes, crust forms all around it on the outside, not just over the top of the loaf.

The end pieces, also known as heels, are only the thin slices that were first and last as the bread went through the slicing machine in the factory.

If you are asking why those slices are included in the bag of bread, well that is obvious. It would take extra labor to remove them and people wouldd get less for their money that way.

Also, if you take the heels off the bread loaf and store it, you lose the end pieces that are thicker and in better condition as well, because the outermost slices get stale faster if you expose their surface to the air.

Leaving the heels in keeps the bread fresher longer.

Alot of ppl like the heel, it makes the best toast. Also, have you ever had fresh homemade bread? The heel, fresh out of the oven with butter is something we always fought over. In store bought breads, it also can serve as a mousture loss barrier for the next slice in line. But honestly, if you dont like it, freeze and save for bread crumbs, feed it to the birds, throw it away, one mans trash is another mans gold.

I like the end pieces...I wish I could have a whole loaf of them. Half one end and half the other.

They are for that emergency oh do I have to use these sandwiches. What about that twisted tweeky thing on the end of a sausage? Everyone just cuts that off, don't they? Best of luck to you!!

I'm guessing moisture but yeah, I've always wondered why they bother. me and my boyfriend always fight over who has to use the "butt."
