Should I store them in the fridge or at room temp? I need the gifts ready for Xmas day for my familys get-together...how soon ahead can I make them?

You should be able to make them now since Christmas is only a week away. Keep everything in the fridge.

I say a day or two before as long as they are in the refgiration. Gosh you're making me hungry for fudge. Hehe!!
