Wash the leaves from the celery, and dry them with a cloth, place on screens or flat surfaces in a warm environment until crispy dry. Crush to a powder. Sift out stems and lumps and your done. Store as you would any dry spice.

You can buy it in a jar in the spice aisle of your supermarket. Sometimes it's called "celery flakes," too.
