All the major ones, plus "No preference" which works for Agnostics and Atheists. Believe Wiccans can now have this preference on their tags, though not yet approved by the VA for headstones.
This will most likely change in the next few years.

I can not find how many religions can be listed on dog tags but 38 symbols can be used on military grave. I assume there are more than 38 religions then. The major ones like Catholics, Baptist, Jewish, Methodist, Holiness, Episcopalian, Mormon & etc. are listed.

you can get whatever you want on your dog tags. i have a friend that has jedi master on his.
