Makes 1 1/4 cups
1 cup quality Mayonnaise (see recipe in book)
¼ cup Dill pickle relish
Pinch Black pepper
2 tbs. Lemon juice
2-4 drops Tabasco sauce (optional)
Combine all ingredients; allow sauce to chill for 5 to 10 minutes before serving.

in a food proccessor put a few capers, a couple gherkins, a splash of worshtershire sauce, a tablespoon of lemon juice, a pich of salt and pepper, turn on the food processor and after it is almost mushy add a cup of mayo.
