Never refreeze ice cream once it's melted.
Not only does this spoil the texture, but there's also a high risk of food poisoning.

The water in it will float to the bottom (or top? can't remember.) and then it will freeze again
(so that its texture is like ice,) and it will not taste as great as it did before. Especially if it's low-fat ice cream. Ick.

You'll have a confection with the texture of frozen library paste.

Enjoy!

It will loose its cream texture and go to a solid state of crap. If it melts, toss it. Side note, if you chunk it out and microwave it momentarily it and stir it is eatable.

The texture might be a little different but if you didn't let it sit out and spoil, it will refreeze and be fine.
