I'm getting ready to get dinner ready for tomorrow. I'm making veggie chili and am going to chop up my veggies. I am wondering if I chop the zucchini now, will it brown by the time I go to use it?

Wait til tomorrow to chop it. It will get a little brown even with some lemon juice drizzled on it...especially overnight. It will also get soggy.

Zukes contain a lot of water so you can try this tomorrow... Sprinkle zucchini slices with salt and drain them in a colander for 20 minutes. They'll have a better texture for you.

It does brown, but not as quickly as eggplant. Put a peice of paper towel at the bottom of the container, and one on top before you seal it. It will be fine for 24 hours.

You might want to put them in cold water, or spritz them with citrus juice...or yes they will turn brown. And they WILL turn brown in a air tight container, I've done it.

It will not browned if you put it in an air tight container, or covered with glad wrap, other ways it will rust.
