Self rising flour...Self-rising flour can be created by combining 1½ teaspoons of baking powder with a ½ teaspoon of salt and 1 cup of all-purpose flour.
I've tried many fried chicken recipes and Paula Deen's recipe is probably the easiest and the best... Crunchy crust. I've tried batters, regular flour, bread crumbs (shake n bake and Dixie Fry) and cornmeal, but never tried self rising flour. However, I gave it a try and it worked giving me the crunchy crust I've always looked wanted in my chicken.

3 eggs
1/3 cup water
About 1 cup hot red pepper sauce (recommended: Texas Pete)
2 cups self-rising flour
1 teaspoon pepper
House seasoning, recipe follows
1 (1 to 2 1/2-pound) chicken, cut into pieces
Oil, for frying, preferably peanut oil
In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture.
Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.
Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

If you are talking about southern fried chicken, or like KFC all you have to do is season the chicken how you like it..I use Lawry's season salt, Lawry's garlic salt, salt and pepper. Then roll the chicken generously in flour. No eggs needed if done right. Have the oil (only put in enough oil to come half way up the chicken) in your frying pan hot (not smoking hot of course) then put your chicken in. Let it brown the one side real good, turn it over, turn down the heat on low flame and cover. Cook 20 minutes then take the lid off, cook another 20 minutes after turning the chicken. Turn heat slightly up to get the desired color to it. Good luck!!

You need flour, egg wash (raw egg mixed w/ water or milk) and bread crumbs. You also need salt and pepper and whatever seasonings you like (I like a little oregano and parmesan mixed w/the breadcrumbs). Put a couple tablespoons of flour on a plate and about 1/2 cup of breadcrumbs (with your seasonings) on another. Make the egg wash in a shallow bowl. Salt & pepper both sides of the chicken, then coat one piece at a time with flour. Shake off excess and transfer to egg wash. Let excess drip off and coat with breadcrumb mixture. Cook in hot oil.
Easy.

This makes the BEST CHICKEN....
Get some milk, eggs, four, salt & pepper.
Put the eggs and milk in a bowl, mix.
Put the flour, salt, pepper in a plastic bag and shake.
Put the chicken in the flour.
Put it in the egg & milk combo
Put it in the flour again and fry.
This is THE BEST CHICKEN you ever had!

Buy Bread crumbs in a can. Or use Bisquick, or Pancake mix, or just flour, salt, and pepper, rinse the chicken parts in water, pat dry, crack two eggs, whip them, dip the chicken in the egg then in the bread crumbs and seasoning mix of your choice. Now you can fry it in oil, or bake it.

I would dredge the chicken in flour, then in beaten eggs, and finally in seasoned bread crumbs.
Alternatively, you could make a batter out of beer and flour and seasonings (slat. pepper, oregano, etc.)... then dip the chicken pieces and fry immediately.

ok first marinade the chicken in butter milk for at least an hour. take flour and season with salt, pepper, garlic powder, onion powder and paprika. add chicken to flour then back to butter milk then back to flour. fry in hot peanut oil

Cup of flour, 1 tsp. of salt, 1 tsp of pepper... mix well. Dip chicken in buttermilk, then in flour. Be sure to shake off excess... loose flour doesn't make more coating, it just makes a mess in the oil!

Italian style,you won't even need dipping sauce!! .8 ozs. breadcrumbs.3 pieces garlic minced.1 teaspoon garlic salt.Fresh parsley(best)or 1tbs.dried parsley,1/2 cup Romano cheese.Salt,pepper to taste.You can dip chicken in Milk or egg with alittle milk in it.(scramble eggs well)Then just fry get oil hot ,BUT not too hot.Then just fry slowly.Delish!!!!!
