sorry but i don't know the amounts in english measures, but my mom makes a really good oyster stuffing, and it's very simple
1 box of stove top stuffing for chicken
minced fresh sage, to taste (we like a lot of sage)
1 tin of smoked oysters, rinsed and minced
Prepare stuffing according to directions, add sage and oysters. Place in baking dish and bake for 1 hour at 250 until heated through and crusty on top.

People love fruity things. Make mediocre stuffing and bring an apple dessert like apples in brown sugar and butter with walnuts and they will forget about the stuffing if you serve it with something that you don't have to doll up for taste like boring bread cuz it's so OBVIOUS--it's like putting perfume on a homeless man!
