This hyper activity can become an advantage when you'll grow up.
I know a lot of business men who talk very fast and who has a hyper activity like yours.
They generally think faster (and better) than a lot of people.
My opinion is not to change (calm down) but to turn this "stupid habits" to advantages, you can for example try reading books (they will keep your brain working and they will keep you focusing on something that can make your parents change their opinion on your maturity).

Oh. I have to admit, at first I thought your question was a joke. Sorry.
Well, I would guess that you admitting that there might be something wrong is the first step in the right direction in ANY problem, if there is a problem. If I was 19 and my parents felt the same way as I about my acting, I would ASSUME I would tell them that maybe we should talk to someone, a specialist. But if you are too embarrassed to go through someone your parents know and will constantly speak with, you can also just go in on your own and be forward with a doctor and maybe he can refer you to someone.
I would think about the way I might act when I'm 20 something as a motivator. Who wants to be known as immature their who life? Use that as a reason to finally get help.
I'm not specialist or doctor, so please don't laugh at me if this answer sounds stupid to you, I just feel like answering questions about peoples problems tonight. Good luck.

If you want to calm down and can't- see a doctor and take meds. If you enjoy your energy level, try to turn that energy into more productive endeavors and be effective with your energy. Being Hyper all the time is a psychological condition- usually a type of Bi-Polar disorder. people think of BP as uncontrollable up & downs...I have a similar condition... mostly all ups and few to no downs. Get professional diagnosis and decide whats right for you. There are consequences to always being hyper- you can get into trouble and odd situations far easier.

Maybe you're just hyper. I know people like you all the time who have way too much energy. It's fine. Maybe instead of bouncing your leg up and down, move your toe in the same beat that you would bounce your leg up and down. Talking too fast--well, I do it too, just try to enunciate every word. Trust me, it slows you down.

Firstly your parents want to much.
With the leg thing:
LOOK around heaps of people do it...
including me.
With the talking thing:
when people say you talk to fast just think;
there brain lacks the capacity to comprehend my oh so fast strain of thought.

If you still want to calm down so desperatly,
for yourself & not for your parents the try meditation...

Seeing as your 19 you might think it's a bit stupid BUT

I'm 13 & it calms me down so, you know???
Give it a try!
