My family loves me when I bake cookies for them. Here is a goodie that is a fudgy chocolate brownie type. You will love it.

CHOCOLATE CRINKLES:

2 cups plus 2 tablespoons flour
2 teaspoons baking powder
1/2 cup butter or margarine at room temperature
1 and 3/4 cups sugar
3 large eggs
1 teaspoon vanilla
4 squares (one ounce each) unsweetened chocolate, melted
confectioners sugar (powdered)

Mix flour, baking powder. In a large bowl beat butter and sugar with electric mixer until fluffy. Beat in eggs until mixture is pale yellow, then add vanilla and chocolate until blended. Gradually add flour mixture, mixing just to blend. Refrigerate dough for about one hour. Heat oven to 350 degrees. Lightly grease cookies sheets. Shape dough into 1 and 1/4 inch balls. Roll in confectioners sugar. Place on baking sheets and bake about 12 minutes until tops are puffed and crackled. Do not over bake. Cookies are soft when hot but firm and chewy when cool. Makes about 52 cookies.

Be patient when rolling the dough into balls. Your hands get a little sticky, but it is worth it.

This is a Oatmeal Banana Nut Cookie recipe hope you enjoy!! Preheat oven to 375 degrees F (190 degrees C). Cream butter or margarine with mixer. Blend in whole eggs, sugar, and extract. Add flour, baking soda, and salt. When the ingredients are thoroughly mixed, add oats and pecans. Mix on lower speed until consistent. Drop pieces of the dough using an ice cream scoop onto an ungreased cookie tray roughly 3 to 4 inches apart. Bake 8 to 10 minutes. Eight minutes would yield crispy cookies with a chewy, slightly doughy center. For harder, crispier cookies, bake longer. Cool on wire rack.

Oatmeal Coconut Cookies

These are really easy to make and they disappear off the plate!

3/4 cup coconut (lightly toasted in frying pan)
1 cup rolled oats
1 cup flour
1/2 to 3/4 cup brown sugar (depends how sweet you like them)
1 tsp. baking soda
1/2 cup butter, softened
1 tbsp. corn syrup
2 tbsp. boiling water

Combine all dry ingredients in a bowl. Then add butter, syrup and water, mix well. Form into balls and flatten with a small spoon.
Bake at 350 degrees for 20 minutes or until golden brown. For a crunchier texture, turn off the oven and leave the cookies in for another 15 to 20 minutes.
