It can separate so the flour settles and fluid pools on top. Stir it back into it's former self and it will be fine. Use a clean spoon so you don't contaminate it with other microbes. As long as it's bubbling gently and smelling sour you are fine.

you probably need to add more flour, but keep it sticky.
