Yes I think so...I worked at a restaurant and I think it's so annoying when customer tried to change the ingredients. Picky people should cook their own food. Obviously they eat out for a reason. To answer your question. If it taste it first than season than it's much smarter. What if you season it and it's to salty than it's to late.

Depends on the restaurant. Your higher end restaurants usually won't have any salt or pepper on the tables because their food is suppose to be seasoned and cooked to perfection.
However if there is salt and pepper on the table its there for a reason. And that is so you can season it to your taste. But I would at least taste the food before adding anything to it since you don't want to over season it. Once you over season it there is very little you can do with it afterwards if you don't like how it tastes.

It's not rude.. but it would probably be stupid. Considering you are the one that is going to eat it.. why assume you know what it needs until you taste it and determine for yourself. After you taste it.. then by all means... season to your hearts content. Like I said.. YOU'RE the one that is going to be eatting it, not the chef.

Season later.
I feel it is rude to salt , pepper or cover any food with sauce, before you taste it..
To me it feels like an insult because if you have to cover the food with toppings, then it must not taste that good, hence why you cover it with other seasonings.

It is generally considered rude, and it's also unwise. What if the food is already salty enough and you put more salt on before you taste it? After you taste it, you'll know if more seasoning is necessary.

Yes, it's rude. There's nothing wrong with widening your experiences and trying food from different cultures or styles without adding your same old spices/ketchup/salt/ or pepper. Maybe there's some subtle flavorings you'd miss. If you still can't take it, season away!

Yes. Please taste first. You might be surprised. And if you don't think it has enough seasoning, then add more.
You can't take it away once you have added it. So, the chef might have added enough seasoning for even you. Then, when you add more, ... too much.
