Pared means take the skin off, (with a peeler is easiest) and quartered means cut them into four pieces.

Other answers are confusing "Paired" with "Pared" There is no such thing as Pairing potatoes. Paring means peel the skin away.

that means that you need to cut your potato in half. the other means that you need to cut it onto fours, first cut it in half then in half again. You can remove the skin or not it depends on whether you like it or not. or if the recipe says that u need to take the skin of. :D
