We also hear "first cousin second removed". What exactly does this mean as in family relations to us ? We know we have cousins, aunts, uncles, etc... but please explain where this "first & second" label comes from or how it fits in the family tree scheme.

It's actually "first cousin, twice removed" or "third removed". As an example:

My mum's cousin is technically my second cousin. He is also my "first cousin, once removed". My mum's second cousin would my "first cousin, twice removed".

Your second cousins are the people in your family who have the same great-grandparents as you., but not the same grandparents. When the word "removed" is used to describe a relationship, it indicates that the two people are from different generations

You are "once removed" (or one time removed) from your parent's first cousins, say "Mason & Maxine". Your children will be "twice removed" or (two times removed) from those same cousins of Mom & Dad (Mason & Maxine).

But Mason & Maxine's children (say Dawn & Aurora) go straight across to you, (not up or down any generation levels,) so they are just your straight across "second cousins. " Stay with me, your second cousins Dawn & Aurora's children will be your second cousins (once removed) or "one-time removed" from the generation of you and your second cousins Aurora & Dawn.

Yes, Mom & Dad's first cousins Maxine & Mason can also be referred to as your second cousins. Their kids Dawn & Aurora may be called your first cousins twice removed, or your third cousins. (It may depend on how your family prefers to refer to different generations of cousins.)

it means that they are one generation apart from each other, what is meant by generation is each member of your family is a generation. Lets say that yor mom is the 15 generation if you have siblings the oldest would be the 16th generation the middle sibling would be the 17th generation and so on.
