Widely-respected trainer Patricia McConnell has a pet theory that dogs roll in stinky stuff to show off that they live in a "high-rent neighborhood" with an excess of good prey and stuff to scavenge, sort of like doggie bling-bling. Instead of gold chains or fancy cars, dogs sport their stinky dead fish or possum, and after all, scent IS the most important sense for a dog.

It's probably a latent survival instinct. It covers up their smell so their prey is less likely to be spooked.

For the dead things, they are trying to put their scent on it to claim their ownership.

To them, they like LOVE the smell. And, even though it's nasty and gross to us, to them it's like rolling in chocolate.
