When making cupcakes, there are several different ways to prepare layered cupcakes.
1. Dig a hole out with a spoon, fill in with pudding and cut the top off of the piece you dug out and put it on top so you can frost over the top without mixing into the pudding.
2. You can slice cooked cupcakes and give them 2 or 3 layers. But you really should use a cake knife and make sure the cupcakes have cooled completely. Refrigeration helps. You can cut layers and reassemble the cupcakes with different flavored cake layers and put a bit of filling inbetween layers avoiding the edges just like you would with cake, but then they will not fit into a cupcake wrapper very well and they will be super messy.
You have to be careful to keep the bottoms on the bottom - the middles in the middle and the tops on the tops of course when you reassemble them.
I bet Wilton would have some great ideas! That's where I always go when thinking about ideas for cake!

I think they are. You just have to fing a way to bake a bottom layer, then the top layer. Or you can bake wrapperless cupcakes
that are double layered; just cut out the middle and fill with filling.

yes, there are two ways to to do a double layer cupcake.
1. once your cupcakes come out of the oven, cut them in half horizontally and fill with your desired icing or filling.
2. once your cupcakes come out of the oven, take an icing bag and cut a small but deep hole in the bottom of the cupcake, (don't throw out the cut piece), fill in the hole with icing and then cork the bottom with the cut out.
the second one is better.
