I am planning to serve roast chicken with roast carrot, pumpkin, potatoes and peas. How many chickens etc would you recommend I buy?

I'll share my secret with you! Whenever I have to make dinner for more people than usual, I use this trick. It's all about multiplying. In your case, you'll be serving chicken. From each chicken you'll be getting 2 drumsticks, 2 breast etc...total pieces per chicken is 8. So if each guest eats 2 pieces, you'll be needing 20 pieces. So 3 roasted chickens would be more than enough. Now do the same thing with the vegetables. Have in mind the size of the plate you'll be using and how many pieces of carrots, pumpkin and potatoes each guest will be eating .Remember , men eat more than women, and adults more than children. I do not like to buy by pound..because at the end of cooking , it all becomes "smaller". In beverages, keep in mind that people like to drink around 2 glasses of any beverage while eating.

I would say three to four chickens depending on the size, and a kilo of each vegetable should do the trick. You should also aim for three bottles of soft drink/juice and ask your guests if they'll be drinking before you spend too much on alcohol.

4 lg birds.... that should give you enough for the meal and enough to make a soup with afterwards.During a normal meal, you should plan for 1/4 lb per person but with Xmas ,everyone eats double that. 4 birds might sound excessive, but by the time they have cooked and been sliced and everyone has seconds, you should be set.
