Different reasons, I think. Some quote it because they think that the quotation pertains to the question. Others quote it because they can't think for themselves, only parrot what they were taught.
There really ARE many answers to people's questions in the bible. Few people know the book well enough, or are honest enough, to point out that the bible contains many contradictory answers to some of the questions.
My late Husband loved to argue scripture, could quote chapter and verse, and constantly pointed out to people that yes, the bible says that there, but it says the exact opposite here, and sometimes something else altogether over there. He wasn't popular, but the intelligent people respected him for his knowledge and command of the book, and his debating skills.

The Bible is a book of Laws, just like laws of physics. God the creator of Heaven and earth is bound by his LAWS, not ours. How many religions are there in the world, how many gods of this world we imagine, or not imagine, there is no bounding law for any of this like physical laws are absolute. So are laws of the Bible and if you knew how to use them you could be a very rich man. But if you cannot believe it you will have no power at all except to argue with fools that will listen. But the power of God is how the god of this world called Satan, Lucifer, devil, and many other titles keeps his subjects blinded to the light, because he know the truth will absolutely set you free. This is just one Bible LAWS, you are bound to fail by what you do not know. Even an athiest can understand that.

I once asked if anyone could recommend a good science book on the theory of evolution, and two people actually recommended the Bible. Go figure.

I think it is like a toddler learning to walk. Once he trusts his frame to stand and gains confidence, he does not crawl again with that frame. Likewise, as the Bible begins to make sense, there is no turning back. Why would you?
I am talking about spiritual sense and not a literal sense.

Because too many people dont have the intelligence or even plain common sense to come up with an answer without resorting to using the Bible. They think just because it comes from the Bible it makes them automatically correct.

Well perhaps you lack conviction in your beliefs so you don't understand why christians believe. If you believe, then you believe. The bible is our guideline for how we live our life. Why act so surprised by a christian who has the odacity to act like a christian.
