Easy Shrimp Ajillo

1/2 cup pure Spanish olive oil or more to taste
4 to 6 cloves garlic, finely chopped
2-1/2 to 3 pounds prawns or extra-large shrimp
juice of 2 limes
salt to taste
pinch of dried oregano
1/4 cup finely chopped fresh parsley
dash of Tabasco sauce, optional

Directions:
1. In a large skillet over low heat, heat the oil until it is fragrant, then cook the garlic, stirring, 1 to 2 minutes. Raise the heat to medium, add the shrimp, and cook, stirring, until they turn pink, 5 minutes. (If you prefer extra oil, add it along with shrimp.) Add the lime juice, salt, oregano, and parsley, and stir well. Add Tabasco.
2 Transfer to a heated serving platter and serve immediately, accompanied by crunchy bread to soak up the garlic-flavored oil.

Icy Shrimp Cocktail

Ingredients
Orange
20 cooked, peeled, and deveined large shrimp
egg-sized heap snipped cilantro
Salt and pepper
Orange wedges
Green olives
Hot pepper sauce

Directions
Peel, section, and coarsely chop an orange. Toss (gently) with about 20 cooked, peeled, and deveined large shrimp, an egg-sized heap of snipped cilantro, and a lil salt and pepper. Chill. Seve with extra orange wedges; green olives, skewered if you wish; and hot pepper sauce.

3 cloves garlic, sliced

3/4 cup Goya Olive Oil

3/4 lb. medium shrimp, shelled and deveined

1/2 tsp. crushed chili pepper or 1 small chili pepper, chopped

1 tbsp. Goya Adobo All-Purpose Seasoning with Pepper

2 tbsp. chopped parsley, for garnish


1. In a skillet, heat oil on medium. Cook garlic until golden. Stir in shrimp and chili peppers and cook for 3 minutes.
2. Remove shrimp and garlic slices from oil with a slotted spoon, reserving oil. Sprinkle with adobo and serve drizzled with reserved oil and topped with parsley garnish.

Serves 3-4
