I usually use 1 egg and some flour.. and im short on eggs so do i ''have'' to use an egg for it to taste just as good or what??

The egg provides binding, just like it does when you make a meatloaf. You can omit the egg. I make mine as follows:

Drain salmon. Add bread crumbs (enough to hold the salmon together), salt, ground pepper and chopped onion (green scallions, dry/minced or cooking). Mix well. Form patties and fry until golden on each side.

try stir frying it instead?

what you will need are:
chopped onions and garlic
diced tomatoes
1 egg
salt & pepper

what you will do:
saute onions and garlic then add the tomatoes. add the egg and continue frying/ "saute-ing" (the whole point here is not hold the egg together). when the egg is cooked add the salmon. add salt and pepper for desired taste.
