Ingredients

3 cups corn meal
1.25 cup boiling water
melted butter
salt to taste


Preparation
1 Mix corn meal and salt in bowl.
2 Pour boiling water in center (like well) and knead to a stiff dough with a spatula or big spoon.
3 Divide it into about 10 balls and roll each out to a circular disc shape (about 1/8 inch thick, and 4 inches in diameter).
4 Cook breads in either on a skillet with oil or ghee until brown on both sides on low-medium heat.
5 Serve hot with Chutney.








Ingredients

1 bunch sarson greens
1 bunch spinach
1 onion grated
1/2 tsp. each ginger & garlic grated
3 green chillies
1 tbsp. grated cheese or paneer (optional)
1/2 lemon juice
salt to taste
2 tbsp. ghee
1 tbsp. oil
1/2 tsp. garam masala
1 tbsp. maize flour

Method


Chop both greens, wash, drain.
Heat oil in the pressure cooker direct.
Add both greens, green chillies, stir.
Add ginger, garlic, stir.
Add few pinches salt, 1 cup water.
Pressure cook till done. (2 whistles).
Mash well.
Heat ghee in a pan, add onion, saute till brown,
Add all other ingredients, except cheese.
Stir well and cook till oil separates.
Garnish with cheese.
Serve hot with makki ki roti, or paratha.

buy frozen mustard greens defrost it take the liquid out then microwave it for 3 /4 min then puree it fry onions chopped finely chopped garlic chopped ginger in oil onions 2 garlic 2 cloves i teaspoon ginger fry till onions light golden puree mustard greens now and add to the golden fried onion mix cook till all blended and top it with sour cream also add salt and 1/8 teaspoon turmeric and 1/4 teaspoon garam masala and mix . buy corn flour yellow or white add water and knead it like bread flour on the dry side.... roll it in balls and roll into the size of a large pancake. preheat a cast iron pan or regular pan and cook one side till it is golden brown flip baste with butter and cook on the other side as well some people mix corn flour and regular flour half and half.
