How do I keep all my music on my iPod after all of the music I originally had on iTunes had been erased?

Don't erase your Ipod. The music will not go anywhere.

In the itunes menu bar it should have a checked box on "uploads songs to ipod automatically", just uncheck that box and ur good to go... What itunes does is duplicate ur itunes into your ipod,, so if youve deleted all ur songs and only left 5 songs,, it will automatically erase all ur songs and just keep them 5, so you ipod is updated with ur itunes.. So after you unchecked that box all you gotta do is click and drag the songs into your ipod icon on the left side pannel,... I'm not sure where exactly in menu it is located,, cause i haven't used it for years,, but it should be easy to find..
