you could use a Jiffy Mix in the box, where all you add is an egg and 1/4 cup of oil and 3 tablespoons of milk and bake for about 20 min or you could get a box of cornmeal and use about 1-2 cups cornmeal and then the egg, oil and milk. Bake at 350 10-14 min or until golden brown. I use a muffin pan lined with muffin liners instead of the old-fashioned kind where you bake in a cast iron skillet. Hope this helps!

Where did you go in Florida. There are millions of places that make cornbread. But here is a recipe though.
1 cup cornmeal (stone ground if you can find it, regular old Quaker if you can't)
1 cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 large eggs, lightly beaten
1 cup milk
1/4 cup rendered bacon fat
1/2 cup grated monterey jack cheese
Preheat oven to 425 degrees F.
Combine all dry ingredients except the cheese, and whisk until blended.
Add the wet ingredients in this order: eggs, milk, bacon fat.
Whisk or stir until well mixed, but not completely smooth, just like a pancake batter.
Add the cheese and stir to blend.
Pour the batter into a lightly greased round cake pan (for pie-like slices) or into a 9" square pan.
Bake for about 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.

1/4 cup granulated sugar

1 cup milk
1 cup all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
Preheat oven to 375°F. Grease an 8-inch square baking pan; set aside.
Combine butter with sugar and eggs in a large mixing bowl. Blend in milk, flour, cornmeal, baking powder, and salt until the batter is just blended (a few lumps are ok).
Pour batter into prepared pan and bake for about 25 minutes or until surface springs back lightly when touched and a toothpick stuck into the center comes out clean.
Remove from oven and place pan onto a wire rack; serve hot or warm.

Any market carries Jiffy mix. they add water and maybe oil and bake. Or buy a bag of yellow corn meal recipe is on the side. The best way to cook is in a cast iron skillet. But any flat pan or casserole dish will work.

If you can find a bag of cornmeal mix in England here is a good recipe.
1. preheat oven to 450 degrees
2. pour about 1/3 cup vegetable oil in the pan you will baking the cornbread in and put it on the stove on low heat to heat while you mix the cornbread
3. pour 3 cups of cornmeal mix in a large mixing bowl, add 1 egg and enough milk to mix it all well
4. when you have that mixed, pour the grease that was heating on the stove into your mixture and stir well
5. pour all of this into your pan and bake until golden brown
(by heating the grease on the stove and stirring it in your mixture, it helps to cook it thoroughly and tastes really good when done)

SOUTHERN STYLE CORNBREAD ALABAMA STYLE
two cups of corn-meal
2 eggs
1 cup buttermilk
1/2 c regular milk
Whisk with fork until smoothe (not too thick not too soupy)May have to add more of either milk. Usually made (in Southern U.S.) in a cast iron skillet but can be made in muffin pans. If using a skillet, put about 1/4" vegetable oil in bottom and heat atop stove. Pour mixture in (it will sound like it's frying) them place in 350 degree oven until top is lightly brown. Flip onto plate, cut and serve with butter. Or you can use greased muffin pans.

Look in the baking isle of the grocery store....the isle where all the cake mixes are. You should find a box or a bag of mix to make corn bread. I use the Martha White brand. Just have to add the liquid. Add a touch of sugar or a pack of spenda and it's a nice touch. We call it Johnny cake...yummy!

if you live in the states, the cornmeal box has the recipe on the side of it when you purchase it,, we use Marie Calenders and cook it in the microwave for 7 minutes,, comes out good and is quick
