do you freeze before or after cooking? how do you defrost them ?will it change thier texture?

I think I would be very careful doing it, it may change the consistancy of the shroom caps as shrooms contain a lot of water, which could seep out when you are thawing them thus, ruining whatever you have them filled with...I would thaw them out in the fridge if it were me, then they would not thaw too quickly, like if you did it in the microwave or something...I would not keep them frosen very long, like a week at most, it might be wise to freeze them before cooking...

Freeze them after they have been cooked. Defrost in the fridge and reheat in the oven. Anytime you freeze something, you change it's texture and quality. That's why everyone advertises "fresh" and not "frozen".

Do not freeze mushrooms, they get all watery.
