I have to make an Ecuadorian Christmas Dish for Spanish Class. It can be a main dish, side dish or dessert, just a small serving. Does anyone have any suggestions for an easy ecuadorian recipe?

I'm not sure Christmas is celebrated in Ecuador but here's a recipe that is Christmasy!

Ecuadorian Bread Pudding
From CookbookWiki

* 1 qt milk
* 5-6 cups bread cubes
* 1/4 cup butter
* 2 eggs
* 3/4 cup Sugar
* 1/2 tsp salt
* 1 tsp vanilla
* 1 1/2 tsp cinnamon
* 1 tsp nutmeg
* 1 cup Raisins

1. Scald milk. Add bread cubes and butter.
2. Beat eggs. Add Sugar, salt, vanilla, cinnamon, nutmeg and Raisins.
3. Combine both mixtures. Pour into buttered 9x13" pan. Sprinkle with nutmeg.
4. Bake at 375degF 45 min. to 1 hour.

Hmm... I'm Ecuadorian and I haven't heard of anything exclusively ecuadorian that is served on christmas... but this recipes should work fine:

ECUADORIAN TORTILLAS

Potatoes (1 to 2 per person, depending on size of potatoes)
Mozzarella cheese
Cooking oil

Wash, peel and cut potatoes. Boil in salted water until soft enough to mash. Let mashed potatoes cool a little. Take a handful of potatoes and make a small pocket in the center with your fingers. Stuff it with small pieces of Mozzarella cheese and mold to form a patty. Fry over medium heat in 2 tablespoons oil until brown. Turn over and fry other side, adding more oil as needed.
