Does anyone have a good recipe for chocolate chip fudge? Not fudge made with chocolate chips which melt, but true chocolate chip fudge? We had amazing chocolate chip fudge in 1982 in Gatlinburg, TN in the mountains, and I have never been able to find chocolate chip fudge since then. So, I've given up looking and would like to make my own, but I need a recipe. I've never made any type of fudge before, but I like to cook and bake, and I can read, so I'm thinking it can't be TOO hard. LOL. Any recipes would be greatly appreciated. CHOCOLATE CHIP FUDGE


1 1/2 tb Instant coffee granules
1/4 c -boiling water
3 1/2 c Sugar
1 12-oz can evaporated milk
1/2 c Butter
1 7-oz. jar marshmallow cream
1 tb Vanilla extract
1 12-oz. package semisweet
Chocolate mini-morsels

Dissolve coffee granules in boiling water; set aside.
Combine sugar, milk and butter in a heavy saucepan;
cook over low heat, stirring constantly, until sugar
dissolves. Cook over medium-low heat until mixture
reaches soft ball stage (238 degrees). Remove from
heat. Add coffee, marshmallow cream, and vanilla. Stir
until blended. Let cool to lukewarm (110 degrees).
Beat until mixture begins to thicken. Gently stir in
mini-morsels just until partially melted. Pour mixture
into a greased 13- x 9- x 2-inch baking pan. Let cool
completely, and cut into small squares. Store in an
airtight container. Yield: 3 pounds Source: Southern

Chocolate PEANUT BUTTER CHIP Fudge

INGREDIENTS
2 cups semi-sweet chocolate chips
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon vanilla extract
1 cup peanut butter chips

DIRECTIONS

In heavy saucepan, over low heat, melt chocolate chips with milk and vanilla, stirring frequently.

Remove from heat. Add peanut butter chips; stir just to distribute chips throughout mixture.

Spread evenly into wax paper lined 8- or 9-inch square pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Store leftovers covered in refrigerator.
