Some of the easiest most fun ideas come from the book Cake Doctor. In generally bake from scratch but when I'm in a hurry I can always find a great choice in the Cake Doctor. This is a full book of recipes that start with mixes. They just doctor them up and you'd never know they weren't from scratch.
Here's the website but you can also purchase the book at Amazon, Sams Club or your local bookstore. When you get to the website take a look at all the books available and then click on RECIPE CORNER at the top of the page. I've made the Holy Cow cake a couple of times. The Chocolate Eggnog cake would be nice for Christmas....

Since you're asking for small cake ideas, too... I don't eat sugar so am baking for only my husband. Because of his restrictions he doesn't eat frosting. I purchased two six-inch bundt pans, make my regular recipes but bake them in two pans. I just dust them with powdered sugar. I freeze one and serve the other. They're attractive and I no longer throw out moldy cake. They look beautiful sitting under a glass cake dome and keep for nearly two weeks that way. The big plus is that I always have an extra in the freezer for unexpected company!

Make marble cake, large or small cakes. Just make up your sponge cake mix, half it and mix cocoa powder into one half then dollop one spoonfull of plain mix into cake tin followed by one spoonfull of the chocolate , alternating till all the mixture has been used then bake as usual. If you have any nuts in you can crush them and put them on top before baking.

Hi you could make a normal victoria spnoge cake, but seperate the eggs, Add the egg yolks when you normally do. When you have added the other ingrediants, mix the egg whites till stiff add them to the mixture then add a few tea spoons of milk and mix. It really makes a differeance.
