i heard liver is good for you, is there any quick and easy recipes that i can use.

Barbecued Beef Liver

INGREDIENTS
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound beef liver, thinly sliced
1/3 cup water
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1 dash garlic powder
1 tablespoon vegetable oil

DIRECTIONS
In a resealable plastic bag, mix the flour, salt, and pepper. Place the liver slices into the bag one at a time, seal, and toss to coat.
In a bowl, mix the water, ketchup, brown sugar, vinegar, Worcestershire sauce, and garlic powder.

Heat the oil in a skillet over medium heat. Brown the liver slices on both sides. Pour the sauce mixture over the liver. Bring to a boil, reduce heat, and simmer 20 minutes, until liver is tender.




Liver Tarragon

INGREDIENTS
1 pound beef liver, cut into 1/4 inch slices
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup tarragon vinegar
1 lemon, cut into thin slices
2 tablespoons chopped fresh parsley

DIRECTIONS
Dredge liver slices in flour, shaking off excess, and season with salt and pepper.

Melt butter in a large skillet over medium high heat. Cook liver for 5 minutes per side, reducing heat if necessary. Transfer to a heated serving dish, and keep warm.

In the same skillet, increase heat to medium high and add tarragon vinegar, scraping the bottom of the skillet with a wooden spoon. If necessary, add a small amount of water to increase sauce. Lay lemon slices over liver, and pour sauce over the top.

Sprinkle with freshly chopped parsley. Serve immediately.




Liver with Lemon Thyme

INGREDIENTS
1 pound calves liver, sliced
2 tablespoons olive oil
12 sprigs fresh lemon thyme, chopped
salt and pepper to taste

DIRECTIONS
Rinse liver and pat dry. Heat oil in a large non-stick skillet over medium heat. Place the fresh thyme in a layer on the bottom of the pan, then lay the liver on top.

Cook on medium heat for about 4 to 5 minutes on each side. Calves' liver may be eaten slightly pink, but be careful not to overcook it. Season with salt and pepper after cooking



Liver Dumplings

INGREDIENTS
1 pound raw liver
2 cups fresh bread crumbs
1 egg
1/4 cup all-purpose flour
1 dash salt, divided
ground black pepper to taste
2 quarts boiling beef broth

DIRECTIONS
Grind liver in a food processor until smooth.

Blend in bread crumbs, egg, flour, salt and pepper.

Using a wet spoon, drop spoonfuls into boiling broth.

Simmer for 25 to 30 minutes.

liver is an aquired taste. most ppl will not eat it...lol..... all i do is flour it and then bake it in a pan with butter and lots of onions, it does not take very long to bake but don't let it get to dry u might have to keep adding butter. i love eating liver , but considering the function of a liver they usually reccomend that u do NOT eat it more than once a month

Fried Liver and onions! Calf liver, salt and peppered, dredged in flour and fried with sliced onions. Sooo good but you have to have everything else (mashed potatoes and gravy and corn) ready when it comes off the stove because it is not good cold.
