the barefoot contessa makes the best..her recipe uses day old CROISSANTS instead of regular bread!
3 extra-large whole eggs
8 extra-large egg yolks
5 cups half-and-half
1 1/2 cups sugar
1 1/2 teaspoons pure vanilla extract
6 croissants, preferably stale, sliced horizontally
1 cup raisins

Preheat the oven to 350 degrees F.

In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, sugar, and vanilla. Set the custard mixture aside. Slice the croissants in half horizontally. In a 10 by 15 by 2 1/2-inch oval baking dish, distribute the bottoms of the sliced croissants, then add the raisins, then the tops of the croissants (brown side up), being sure the raisins are between the layers of croissants or they will burn while baking. Pour the custard over the croissants and allow to soak for 10 minutes, pressing down gently.

Place the pan in a larger one filled with 1-inch of hot water. Cover the larger pan with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 40 to 45 more minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly. Serve warm or at room temperature.

Bread Pudding

1 loaf stale French bread (the more stale, the better)
1 quart milk
4 eggs
2 cups sugar
2 tablespoons pure vanilla extract
1 cup seedless raisins
2 apples, peeled, cored, and sliced
1/4 cup butter

Crush the bread into the milk and mix well. Beat the eggs and add to the bread and milk, together with the sugar, vanilla, raisins, and apples. Mix well. Melt the butter and pour into the pan in which you're going to bake the pudding, then pour in the rest of the ingredients.
Bake about 50 minutes in a preheated 350-degree oven (until the pudding is firm). This can be served when cool as is, or with a whiskey sauce.

To make a whiskey sauce, proceed with a recipe for vanilla frosting, but omit the vanilla and milk, and add a jigger or two of Maker's Mark bourbon (or whiskey) to the butter and confectioners sugar.

I am not sure whether you mean bread pudding as in a sort of bready cake or bread and butter pudding which is bread and sultanans and custanrd. My Mum makes the best Bread and Butter Pudding :

Bread and Butter Pudding

12 pieces of medium sliced bread
vegan margarine
sultanas
1pint runny custard

The amount that you use will depend on the amount of people you are catering for. For 4 people use 12 pieces of medium sliced bread and 1 pint custard.

Make the custrad with soya milk and sugar/sweetener according to the instructions on the packet but make it slightly runnier by using a little less custard powder (If the recipe calls for 2 tablespoons use one and 3/4).

Grease the inside of a large oven proof dish. Butter the bread with the vegan margarine and slice in half. ut a layer of bread (butter side up) on the edges and the botom of the dish. Sprinkle sultanas on it. Then put a layer of custard. Then put anther layer of bread covered with sultananas and custard. keep layering up until you have used all of the bread and finish with custard. Cook in a 180 degree oven for 30 minutes until golden brown.

Stir in raisins. Sprinkle top with cinnamon.

Bake at 325 degrees F. for 45 to 50 minutes, until the pudding is puffed up and brown, and a knife inserted in the centre comes out clean. Serve warm.

since I have been cooking for a long time I don't really measure anymore.
depending on how much bread you are using, mix about 4 or 5 eggs in a seperate bowl with about 1/4 cup of milk, 1/2 cup of sugar about 2 teaspoons of cinnamon and about 1/4 cup of raisins and about 1/4 cup of melted butter. mix together really well and then break your bread into pieses and add to the mixture stir together until all the bread is moist. poour into a greased pan sprinkle with a little more cinnamon and bake at 400 for about 40 mins. or until brown on top. eat it while it is warm.

good luck.

This one is five stars, I guarantee it! You need to make the sauce to get the full effect.
