Because they may not be presenting themselves on the Internets as they truly are. Who knows who the person is? Somebody saying they are a 25-year-old hot girl could be a 53-year-old pathetic guy living at home with his mother. If you get a picture, then that's a little different. Then, if you move it to phone calls, you get a little more of the picture. You still won't know if you "hit if off" until you meet, however. There are many nuances we need from other people that we don't get from phone calls and the Internets.

Try offering to move to cell phone calls, rather than Internets-to-face to face meet-up. It's a little less threatening, and it will give you more good information to determine if you really want to meet this person in the flesh. You should also start thinking about what you need and want from this person, rather than wondering if THEY will like YOU.
