Whole chicken or in parts?

If cut up, brush with olive oil and sprinkle with parsley flakes, salt and pepper. A little garlic powder doesn't hurt. Bake on a cookie sheet in the oven at 350 until thickest parts are cooked through.

For a whole bird, do the same to the outside of the bird, put in a pan and roast at 350. Put a tent of aluminum foil over the top to keep from overbrowning.

Easy, yummy --

Buy Italian seasoned croutons and be sure you have some italian dressing. Marinate whatever chicken pieces you like (they can be skin on or off, on bone or off, whatever!) in some Italian dressing for an hour or so (just put em in a bowl and cover with some of the dressing and put it in the fridge). Take a cup or two of the croutons, put them in a freezer bag and seal it, find a heavy glass jar (like a sauce jar) and smash the croutons into fine powdery crumbs (this does not take long at all). When the chicken is done marinating, put the pieces on a pan and coat them with the crumbs, then bake at 400 F for an hour. Mmmm!

It'd go great with a salad, or really anything.

If you mean pieces of chicken, here's one that I've used for 20 years and everyone likes it.

*One cut up chicken (two breasts, two legs, two thighs, two wings or any eight pcs of chicken). Purchase with skin on and remove some but not all skin if desired.

*one package dried onion soup

* soy sauce (any type but I use low sodium)

Preheat oven to 325 degrees F.
Line a large baking dish wish aluminum foil, dull side up. Place chicken pieces in it. They can be right up against each other but not on top of one another. Open onion soup packet and stir with fork, mixing powder and dried onions. Shake carefully over chicken until most areas are covered lightly. Now sprinkle all pieces with soy sauce until most of the powder is wet. Don't worry when some of it rolls off. Enough will stay on. Use about 1/2 bottle.
Place in oven and bake for approximately 1 hour 15 minutes. Test for doneness by sticking a fork in one breast or thigh. If juices run clear, it's done.

I serve this with a mild rice mixed with vegetables of your choosing (peas are great)
and butter. A nice salad rounds out the meal.

Mexican Chicken

In the AM throw 4 chicken breasts in the crock-pot. Dump a jar of 505 green chili on top of them and sprinkle an envelope of Taco seasoning mix on top of that. At dinner time shred the chicken with 2 forks. Be careful not to slosh the liquid on you, the chicken is EASY to shred. Once it is all shredded and thick, you can make it into burritos, you can have it on a hamburger bun, you can plop some on a salad. The possibilities are endless and everyone loves it! Be sure to have some grated cheese, diced black olives, salsa, sour cream even for additional toppings.

I have a great salsa couscous chicken recipe...very easy- things you can buy in the grocery store.

3 cups hot cooked couscous or rice
1 tablespoon oil
1/4 cup coarsely chopped almonds
2 garlic cloves, minced
8 chicken thighs, skin removed
1 cup Salsa
1/4 cup water
2 tablespoons dried currants or raisins
1 tablespoon honey
3/4 teaspoon cumin
1/2 teaspoon cinnamon

1 . Cook couscous as directed on package.
2 . Meanwhile, heat oil in large skillet over medium-high heat until hot. Add almonds; cook 1 to 2 minutes or until golden brown. Remove from skillet; set aside.
3 . Add garlic and chicken to skillet; cook 4 to 5 minutes until chicken is browned, turning once.
4 . In small bowl, combine salsa and all remaining ingredients; mix well. Add to chicken. Reduce heat to medium; cover and cook 20 minutes or until chicken is no longer pink, stirring occasionally.
5 . Stir in almonds. Serve over couscous.

If you have boneless chicken
Place a good heaping tablespoon or two of mayo in a dish
pour seasoned bread crumbs in a dish
Roll chicken parts first in the mayo then in the bread crumbs
bake on a cookie sheet for 20 min at 400 degrees tastes like yummy chicken nuggets. You can cut the chicken up in bite sized pieces to make it easier for kids to eat. serve with bbq sauce or sweet and sour for kids. and what ever sauce you like for you.

one cut up whole chicken - dip chicken pieces in melted butter and roll in crushed potato chips (any flavor) bake in a 350 degree over for about 1 1/2 hrs. and serve with cranberry sauce.

heres a healthy recipe for healthy baked chicken fingers.beat 1 egg wit a splash off milk and tablespoon of dijon mustard. with until combine. then dunk the chicken pieces in the egg. from the egg, add into breadcrumbs. place in a greased baked dish. bake in the oven for 40 mins flipping half way

It is funny you asked this, because I was just thinking of making this next week.

Take boneless skinless chicken breasts and put them in a baking dish and cover with cream of Chicken soup diluted with alittle milk. Then bake them till the chicken is cooked through.

The soup makes a nice gravy to put over rice!

Simple, but really good!

I don't know how simple you want, but this one is one of those comfort food types;

Wash the chicken parts and pat dry; place in a deep baking dish and cover with two or three cans of Campbells Cream of Mushroom Soup. Bake this @ 350 degrees for about 1 hr. and serve over rice....

Quick and yummy.
