Canola oil is the most unsaturated, but research done on the Mediterranean diet shows that people who use olive oil exclusively live long and healthy lives.

Peanut oil is monounsaturated also, and I like the taste in cooking Asian food. It also has a high smoke point, so its good for use at high temperatures.

My pantry always has canola and extra virgin olive oil in it. I use other oils on occasion for their flavors or if canola is unavailable.

Olive oil is the healthiest but it has a low burn point. If you are frying foods like wings or chicken or a turkey then you want peanut oil and if you are frying those foods you really dont' care about calories or fat but flavor.

In the supermarket it would have to be olive, but grape seed oil is better than that.
