I was just wondering if anyone had some tips on cooking venison. I dont mind the taste of the steaks so much but I'm sure there are better ways to prepare them. I especially need help with finding ways to make the ground venison not taste so gamey. Any ideas?

The gamey taste in venison can be the result of any one of three factors. One, the meat was not properly field dressed and cared for in the field. Two, the meat was not butchered well, you need to remove all of the fat and silver skin, and three, you are over cooking it. I kill and butcher all of my own venison and I have never had a gamey tasting one. If you over cook steaks they will dry out (because there is no fat) and they will taste gamey so don't cook steaks past medium. Roasts can be cooked more but I recomend a slow cooker or a pressure cooker. Do not maronade in vinegar, vinegar is a meat tenderizer so if you use it on meat that is already tender it will make it mushy. When I have guest over that like their steaks well done I have a reciepe for a Korean marinade that everyone loves. If you want to email me I will send you a copy (I'm at work now so I don't have a copy) But the bottom line is venison should never taste gamey if you know what your doing.

Guaranteed to work, however it takes a little extra work. First put approx. 1 cup of brewed coffee into a fry pan with venison. Add spices you will cook with (recommend onion and garlic powder - always - approx 1/2 teas each). Simmer until all meat has a grayish coating, and no heavy sign of blood remains. Approximately 1/2 hour.
Then drain and cook as you wish with spices. (Yes, cook a second time).
If you have a roast, placing in a crock pot with at least one cup of freshly brewed coffee is best, then add spices on top. Pour liquid over the top at least once an hour or every other hour to help reduce gamey taste.

Why would you purchase it if you don't like the flavour? To dampen the gamey taste you can marinate it in red wine 2 to 3 days. That will help but there will also be a slight flavour you may describe as gamey no matter what.

The gamey taste as from what I read comes from the higher amount of iron and potassium in the blood. So if it is cold enough(below 40 degrees farenheit) leave it hanging for at least 2 days.
If not hang it by the hind quarters and cut the juggler vein. Bleed it out and butcher it approximately an hour later.
Also, quickly washing it in water immediately before packaging helps.

Soak the steaks in 3 parts water to 1 part vinegar for an hour.
Rinse thoroughly, soak in plain water for another hour, rinse
thoroughly - gamey flavor will be gone

For burger: you need to cut the venison (since it is so lean) with either ground beef or ground pork (or both) about 30 % beef or pork to 70 % venison.

You can use buttermilk overnight to remove the game flavor of venison meat. We make Carne Guisada with venison back strap. That's a mexican dish that is similar to beef stew without the vegetables. Some american restraunts will describe it as beef tips in gravy, but the gravy has many other spices. You can find a bunch of carne guisada recipes on the net.

My wife is not crazy for the taste so she makes BBQ, chili, tacos, and stew so you can't really taste whether its venison or beef. The steaks she puts in a slow cook crock pot with carrots and sometimes onions. The way she makes it you wouldn't know it was venison or not.

One way to get the gamy taste out in venison is to soak it over night in vinegar or wine,another way is to use garlic or onions when you are frying the meat,also you can try cutting off the fat ,fat leaves a strong taste in the deer meet.The best way to prepare the meat is to field dress as quickly as you can and put the meat in the cooler to cool it off, age it for four days in a cooler or refrigerator.

My two favorite ways to cook deer are:
1. soak the steaks in italian dressing for 24 hours, then grill it
2. Shred it up and cook it in sweet baby ray's original barbecue sause in a crock pot for about 5 hours.
