Dont want to serve xmas pudding as is a bit too heavy...any ideas?

How bout x-mas pudding ice-cream, get a good quality vanilla ice-cream, a small xmas pud, put some ice-cream into a large bowl, crumble in chunks of the pud, stir, put into freezer to freeze back up, not an issue as long as you are quick with the mixing as won't have de-frosted, and serve when ready, lovely and light but still serving x-mas pud!

Hi, well as many in our family dont like xmas pudding, we try something different. Last year we got an ultimate chocolate cake from Iceland and it was the best cake we had ever had and it wasnt to expensive and it was massive. But this year they must of not been making it so we got and Ice Cream Dome, It looks lovely and we opend it so take a look and tried a little piece of the side of the plasctic carton as we couldnt resist and its lovely and light. Iceland is the place to go for puddings if you got one near you.
Also you could make a triffle or get a jumbo chocolate log, or gateau.

Three favourites in our family are>
Hot or cold mince pies with ice-cream.
Baked Alaska, A round sponge with mincemeat then Ice-cream and meringue on top and cooked quickly in a hot oven!
Both still festive yet lighter.
For a really light pudding try Tropical Fruit salad, pineapple mango and melon. Serve cream, ice-cream or fromage frais with it but keep them seperate. The advantage of this is if people dont want a pudding it can be kept in the fridge till later!

We don't like Xmas pudding. I usually do a choice of different puddings, profiteroles are a favourite and really easy to do, but also, I buy little meringue nests and then we load them with all different stuff, ice cream, fruit salad, cream, chocolate sauce nuts. That way you can have as much or as little as you want

here are some ideas

1. Strawberry Santas - use meringue nests - basic meringue base - spray cream on and add sliced strawberries and kiwi fruit to make them red white and green, play around with them to make Santa faces for the kids - cream for a beard, green eyes and red cheeks

2. Tropical fruit salad - kiwi, 3 types of melon strawberries, fresh pineapple , green and red apple and fresh orange, add a touch of cream and serve with Baileys for those not driving

3. Home made Pirate Trifle, with the usual suspects in the mix and add some coins in plastic bags as a treasure, count the coins in and out and warn everyone in advance

4. Highland heaven, crack up 6 - 8 digestive biscuits to serve 4 and place in 4 tall glasses that will make a solid base add some raspberries and stoned cherries - not pissed or on wacky baccy - add whipped fresh cream as a layer - try brandy cream for a wee bite - and then add more fruit try strawberries and then more cream - now grate some chocolate on top of the cream and place in the fridge for 45 minutes, serve with a piece of shortbread and some berries

I'd recommend making a chocolate torte. Dead easy, and much lighter than christmas pudding, and just as decadent....
Make a base from crushed ginger biscuits, held together with butter.
Make the topping by making a ganache of chocolate, with melted chocolate mixed in with whipped cream, flavoured with orange (Drambuie works well) and cardamom.
Put the base in a cake tin, and spoon the chocolate mix on top. Let it set in the fridge or freezer; keep chilled until just before serving, and serve with pouring cream, if desired.
Yum!

I can think of a few ....
1) Baked Alaska taken to the table alight. ( have recipe if wonted)
2) Profit rolls with a raspberry puree pored over the top. (home made purees the best) and so easy to do.
3) For those that are too stuffed but won't to have something like everyone else, a portion of ice cream with the raspberry puree poured over the top and squirt cream on that with a whole raspberry on the top. This can all be put into one of those... a) ginger snap baskets you can buy. b) or merang cases you can buy.

Try Homemade tiramisu it is delish!!!! mmmmm!!!

Try this recipes

Ingredients :
12 boudoir biscuits, or similar can get these from any major supermarket!
150g mascarpone
150g cream
2 egg whites
4 tablespoons sugar
1 small glass cognac, brandy, liquer, baileys whatever you want!
3 tablespoons unsweetened cocoa powder
1 cup strong coffee

Recipe :
Pour coffee into a shallow bowl.
Soak biscuits in coffee quickly, so they do not disintegrate.
Line bottom of dish with biscuits.
Whip sugar, egg yolks and cognac together until mixture has a moussey consistency.
Whip cream, then add to egg white mixture.
Spread evenly over biscuits.
Chill for two or three hours.

These are my favourites and easy too...

Cranberry Ginger Bars by Luree

Filling:

3 cups of fresh or frozen cranberries

3/4 cups each of raisins, dried apricots and crystallised ginger

1 lb/450g/3 cups of mixed dried fruit of your choice - including lots of dried apricots works very well

1 cup brown sugar

1 cup apple juice

In a large saucepan combine all ingredients. Bring to a gentle boil over a medium heat. Stir for about 5 minutes or until the cranberries have popped. Let cool.

Base and Topping:

2 cups flour

3/4 cups brown sugar

1 and a half teaspoons of ground ginger

1/4 teaspoon of salt

1 cup of margarine or vegetable shortening

1 cup of rolled oats

3/4 cup of raw sunflower seeds

Mix all ingredients together. Set aside 1 and a half cups of crumb mixture for topping. Press the remainder into a 9" by 13" baking pan. Bake at 180C/350F for 15 minutes. Spread with cranberry mixture and sprinkle with remaining crumbs. Bake for another 30 minutes. Yummy!

my family all hate christmas pudding and mince pies- nobody in my family likes dried fruit. Instead I make a nut cake using a wide variety of nuts, peanuts, hazelnuts, walnuts, almonds. I grind them and incorporate them into a traditional sponge mixture also adding ground glace cherries. It really goes down a treat especially with custard.

Alternatively if you dont want to bake anything, Marks & Spencer do a chocolate christmas pudding. I have never tried it myself though.
