There is no substitute for vanilla if you want the vanilla flavor. You might want to try a rum or butterscotch flavored extract and see what happens.

Nearly any extract is ok... almond, butter.... but it's also ok to leave it out if you dont' have any vanilla!

Almon extract is wonderful in cookies, also orange and lemon

I bake my sugar cookies with orange and lemon zest in them
