I just made this last night.
First I browned a pound of ground beef and then added chopped onions and garlic until cooked. Then drain. Add as much beef stock as you need depending on how much soup you are making. I used 32 oz of stock. Then add chopped potatoes, carrots, celery and tomatoes. I then add 1 small can of tomato paste. Stir until blended. Then add about a cup pf barley. I like to season with salt, pepper, thyme, oregano and bay leaf. Let simmer until barley is to your liking. Enjoy!!!

This is soooooooo simple its scary!

2 cup barley boiling on the stove with a dash of salt. Cook till the desired doneness for YOU. I like mine slightly firmer. Drain and return to the kettle with enough water to cover the barley. Now add 2 to 4 tablespoons of beef base, depending upon you flavor desired. Add on large chopped onion, 2 T. crushed garlic & a dash of pepper. Bring to boil. At this point you can add chopped / sliced raw beef or add leftover cooked beef later on. Let boil for 5 minutes then add 2 T. chopped fresh or frozen cilantro and 1 cup frozen peas. Remove from heat and add the meat in now if you did not earlier. Taste and adjust your seasonings.

This is actually better made with chicken if you ask me but people say my beef barley is to die for as well.

INGREDIENTS:
1 pound lean stew beef, cut in 1/2-inch cubes
1/2 cup chopped onion
2 ribs celery, chopped
2 medium carrots, diced
3/4 cup barley
1 bay leaf
6 cups beef broth
1 teaspoon salt, or to taste
pepper, to taste

PREPARATION:
In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.
